Slow cooker recipes save you time, keep your preparation dishes to a minimum and provide a healthy meal!  Use your crockpot or other slow cooker to create these full flavored entrees for your family meals.  All can be created vegan or vegetarian.  More slow cooker recipes are available here.  For other recipes, click here.

Try these slow cooker recipes

      – save time and enjoy healthy meals

 Breakfast Oatmeal

oatmeal

Ingredients:

1 cup oats (organic steel cut are best!)

2.5 cups water

2 T cinnamon

2 apples, cored and diced small

Directions:

Put all ingredients in a crock pot (slow cooker)

Cook on low overnight.

Serves 4

Variations:  Use your favorite fruit, adjusting for amount of liquid.  Add ground flax, if desired.  Top with fresh fruit.

Shredded Cabbage Rolls

Ingredients:

1 head cabbage, shredded

6 cups tomatoes, chopped

2 T coconut oil

1 medium onion, very thinly sliced

2 large bell peppers, very thinly sliced

2 cups tvp (textured vegetable protein) or beans (try lentils or garbanzo)

1 T oregano

1 T basil

1 T rosemary

2 T garlic

1/2 cup nutritional yeast

Directions:

Saute onions in coconut oil until softened.  Add peppers and saute until soft.

Put into crockpot with remaining ingredients.

Cook on low for 7-8 hours or on high for 4 hours until cabbage is tender.

Serves 6 hearty appetites

 

Chili- vegetarian style

6 cups chopped tomatoes

3 cups kidney beans, cooked

1 large onion, chopped

2 large peppers, chopped

2 T coconut oil

1 T cumin

1 T garlic

1 T chili powder

2 tsp Himalayan salt

1 cup tvp granules, optional

Directions:

Saute onion in coconut oil until softened.  Add pepper and continue cooking until softened.  Add cumin, garlic, and chili powder and saute about 2 minutes.

Put all ingredients into crock pot and cook for 6-8 hours on low, or on high for about 4 hours.

Serve with Cornbread or warmed rolls (recipes coming soon!)

Very good topped with shredded cheese, sour cream, and/or cut corn.

We use left overs on vegetarian hot dogs and also served with chips.
