Pasta’s popularity is easy to understand. It’s easy to prepare, takes on many flavors and varieties, and can be a healthy boost to your meals, when prepared properly.

In addition to it’s ease of preparation, pasta can be used as a quick meal, a side accompaniment, and can be dressed for the most fancy of occasions. A simple macaroni and cheese can be loaded with vegetables to boost the health. Spaghetti sauce, with a bounty of vegetables added, atop a mound of whole grain pasta is a very hearty dish, while pasta shells, decorated with small pieces of vegetables and spritzed with a light garlic dressing will pasta luncheonshine at your next luncheon.

Grocery stores host a large variety of pastas, but the best are found in your own kitchen, where you are free to add herbs or vegetables to your base pasta recipe and create a custom pasta to host your sauces and additions.

Homemade Vegan Pasta

Ingredients

2 cups flour (your choice of types, white wheat or whole wheat pastry flour work very well)

1 tsp salt

1 cup of water (more or less, according to need)

Directions

Mix the salt into the water. Add the water to the flour, a small amount at a time, until it forms a kneadable dough. Knead a few minutes, until smooth. Cover and let rest 10 minutes.

On a floured board, roll dough very thin or use a pasta machine to roll. Cut into desired shapes. Use fresh or dry to store.

**Variations: Blend in your choice of seasonings such as 2 T well drained spinach, garlic powder and basil, or perhaps vegetable powder. As we add recipes, you’ll gain more ideas to try!
