Chocolate with Blackberry… what a great flavor combination! These Chocolate Blackberry Cupcakes are indeed a Royal treat.
Blackberries are full of nutrition!
Not intended for everyday, the Chocolate Blackberry Cupcakes are a delicious treat for those special occasions: a birthday, ladies luncheon, or perhaps just to say “I love you” to your family!
Served following a low sugar, healthy meal, these treats will tantalize without offending. To reduce the sugar a bit, try an all fruit jam in place of the compote. You can also reduce the sugar in the cake by about 25% and use less frosting.

For the Chocolate Cake
Pre-heat over at 350 degrees
1/4 C unsalted butter ( room temp )
1 C sugar
1 C chocolate chips
2 LG eggs ( room temp )
2 LG egg yolks ( room temp )
1/2 C vegetable oil
2 tsp vanilla extract
1/3 C sour cream
1 C flour
1/2 tea salt
1/2 tea baking soda
1/2 C cocoa powder
1/2 C whole milk
In a medium-sized mixing bowl or the bowl of a stand mixer, mix butter and sugar.
Melt the chocolate in the microwave or in a double boiler.
Add chocolate to the butter/sugar mix and mix all together
Add in eggs and egg yolks one at a time mix with butter mix
Add in oil, vanilla, and sour cream mix in until all combined
Sift flour, salt, baking soda, and cocoa powder into a separate medium bowl.
Add dry ingredients to wet ingredients, mixing all together
Mix in whole milk
Line cupcake pans with paper liners and spray lightly with cooking spray
Pour batter into pans.
Line a cupcake pan with cupcake liners
Fill each liner 3/4 of the way full with Chocolate cupcake mix
Place in oven for 15-20 minutes
Use a stick or sharp knife poke in center of a cupcake if it comes out clean it is done
Let cool for 30 minutes

2 C blackberries
3/4 C sugar
2 TBSP Lemon Juice
1 TBSP of Fruit Pectin or Corn Starch
In a sauce pan combine all ingredients and bring to a rolling boil.
Reduce heat and simmer until compote thickens.
Place to the side and let cool
Take a small spoon and scoop out the middle of the cupcake about 1/2 way down
Using a small spoon scoop the compote and add to the cupcake filling to the top
Let sit for 10 minutes before topping with frosting

FROSTING
Blackberry Frosting
6-8 C Powered sugar
1 cup of fresh washed blackberries smashed
Directions
Add Butter, Blackberries to the mixer bowl set speed at medium
Now begin to add the powdered sugar one cup at a time and beat until well blended.
Increase the speed to med. speed until light and fluffy.
Place frosting in a pastry bag and pipe onto the top of the cupcake
